Simple Summer Vegetable Recipes

You are to take every kind of food that is to be eaten and store it away as food for you and for them.  (Genesis 6: 21)

Take a trip down one of our country lanes and inevitably you will see a sign at a garden gate saying, “please help yourself!”   Underneath there is a box full of courgettes and/or cucumbers.  Plentiful and welcome, these summer vegetables do grow well around here!

Thanks to one of our readers, we can share with you some very quick and tasty solutions.

Speedy Baked Courgettes:

1 tablespoon chopped chives

Combine all the ingredients and serve with curry-type dishes

Cucumber Side Dish (2)

50 g peeled cucumber
150g natural yoghurt
1 clove garlic
1 chopped spring onion
Salt & pepper

Enjoy and give thanks for this wonderful harvest!

He gives food to every creature.
His love endures forever.

Give thanks to the God of heaven.
His love endures forever.
