Take a trip down one of our country lanes and inevitably you will see a sign at a garden gate saying, “please help yourself!” Underneath there is a box full of courgettes and/or cucumbers. Plentiful and welcome, these summer vegetables do grow well around here!
Thanks to one of our readers, we can share with you some very quick and tasty solutions.
Speedy Baked Courgettes:
Slice them in half, lengthways
Sprinkle with mixed spices
Bake and serve!
Cucumber Side Dish (1)
10 cm cucumber – slice thinly and cut into strips
275 g of Greek yoghurt
Juice of half a lemon
1 large clove of garlic – crushed
1 tablespoon chopped chives
Salt
Combine all the ingredients and serve with curry-type dishes
Cucumber Side Dish (2)
50 g peeled cucumber
150g natural yoghurt
1 clove garlic
1 chopped spring onion
Salt & pepper
Cut cucumber in half, slice thinly
Place in a basin, sprinkle with salt – leave for 30 mins
Drain off liquid and dry cucumber
Combine cucumber with other ingredients (except for salt & pepper – only add for taste)
Cover and place in a fridge overnight before serving
